Re-doing your bathroom was a fun project! I've used the mysterious soffit as part of the design and built it out in back to have a place for a niche for shampoo, loofah, etc. in the shower. The soffit is still accessible from the main part of the room, should it ever need to be torn into. Hopefully, that will never be necessary! As you asked, I've left the toilet in the same place as well as the sink - to make use of the existing plumbing. The finishes are all very earthy and cool with grayish/white tile in the shower, and a natural-tone vanity top. The wood plank floor has a light gray wash on it. The wood planks could easily be replaced with some of today's "wood-look" ceramic tile - which is always the go-to floorcovering for a bathroom. For privacy, I've suggested stained glass in the window over the toilet. But really, that's a personal decision and, frosted glass would do just as nicely.
